If you work in the healthcare food service industry for 6 years as I did, you tend to pick up a little known fact. Today's share is probably a little shocking....those eggs you have sitting nice and cold in your clean refrigerator are crawling in bacteria like e-coli and Salmonella, you're wasting your time and energy costs to keep them cold unnecessarily. OH AND the expiration date of a month or two is COMPLETE b.s.!! A Healthcare food safety administrator told me personally that eggs virtually NEVER expire! Certainly they can last at least 10 months on the kitchen counter at room temperature!
